Hi! I’m so excited for June - the sun is shining, peaches are in season, and Teddy’s 1st birthday is coming up! Here are some highlights from May.
Memorial Day
I hosted Memorial Day and made pulled pork sliders, cornbread, coleslaw, and strawberry blueberry pie. I slow cooked the pulled pork for 8 hours on low using a pulled pork starter sauce, and then served it on King’s Hawaiian rolls with sliced pickles. For the coleslaw, I finely sliced cabbage, carrot and spring onion and made a no-mayo vinegar-based dressing for a quick and easy coleslaw. I used frozen mini pie shells for the pie, and scooped in chopped strawberries and blueberries that had been sitting in sugar for a while, then sprinkled on a simple crumble topping before baking. Everything was delicious!!
For the table setting I used these plates, napkins and tablecloth.
Teddy loves roasted veggies, so I’ve started roasting them at a lower temperature for a longer time to help them get a bit softer without burning. Carrots and cauliflower at 375 for 40 minutes did the trick! I love putting turmeric on cauliflower before roasting for some color. I cooked my chicken on the stovetop and made a sauce with garlic, butter, lemon, basil, and chicken broth.
I bought way too many strawberries for Memorial Day weekend and so I froze a huge batch at the end of the week! I like to trim and cut them first, freeze them in one layer on a sheet pan, and then transfer to a ziplock bag. Sometimes if I just toss them straight into the bag they clump together. I’ll use these for smoothies!
We’ve been getting rotisserie chickens every weekend at the farmers market. I used the leftover carcass to make a chicken broth with celery, carrots and onions. Once everything was soft I removed the bones and blended everything with a hand blender. Then I added a can of tomatoes, salt, and blended again. Then I cooked the pasta straight in the broth until done. It was the perfect thickness and so delicious.
We had the most lovely staycation at the Ritz-Carlton Half Moon Bay. Half Moon Bay is notoriously foggy most of the time, but we miraculously went on a clear weekend with blue skies. It was so relaxing and felt like a vacation even though we weren’t far from home. I spent time at the spa while the boys took long walks and played in the grass.
