5 Meals I Made This Week

Chocolate Chip Cookies
I used America’s Test Kitchen recipe for their perfect chocolate chip cookies. They have a step where you brown the butter and I think that makes the cookies turn out soooo delicious. I bought a jar of peanut milk at one of my favorite restaurants in SF the day prior, so I made these cookies to enjoy alongside it. The dough is freezer friendly and easy to throw in the oven!
Spring Rolls
Start with the sauce by warming dates and cashews in hot water. Grate carrots, cucumbers and cabbage. Slice soft tofu for some protein and then blend the dates and cashews till smooth. Wet the spring roll wraps and start to add all the ingredients! Topped off with sesame seeds and enjoy with the sauce!
Watermelon in the park
Sliced up some watermelon and topped it off with a squeeze of lime! Teddy is loving all fruits right now but watermelon is his fav!
Breakfast with Teddy
Scrambled eggs with a splash of milk and sprinkled with some cheddar cheese. Blackberries, blueberries and strawberries from this weeks farmers market!
Salmon Burgers
Tried these new sockeye salmon burgers from my go-to fish stand at the farmers market, and they were delicious! I love using radicchio as a lettuce wrap, and added a side of fresh greens with red onion and sungold tomatoes with a lemon and olive oil dressing. I also stirred together some sour cream and lemon for a tasty sauce on top.
Early Morning Routine
Teddy loves breakfast just like his mama. We alternate between oats and eggs. This day was scrambled eggs with cheddar cheese, white and yellow peaches and a side of greens!
Beet Sausages and Veggies
This is one of my go-to easy dinners! Bake sausages at 350 for 20 mins. Cut bell peppers, onions and mince the garlic and sautée. Served with a side of rice and mustard for the sausages!
Breakfast for the three of us
Scrambled eggs, breakfast sausages and our favorite berries! For an afternoon pick-me-up I got a Black Sesame Hojicha Latte from a new spot in town.
Frozen Peach
Froze a yellow peach over night, grated it and then added some local honey to enjoy in the sun! Such a refreshing treat!
Steak and Potatoes
Seared strip steak with butter and sage while I baked potatoes, yellow beets and white turnips at 350. Added sour cream and cheddar cheese to my potatoes.

Love the idea of adding dates to peanut sauce! I usually make mine with coconut aminos to sweeten, but might have to give this a try!
