Grilled peaches & burrata
cut peaches in half and brush with olive oil. grill cut side down on medium high heat for 4-5 mins, rotating halfway through to get crosshatched grill marks. serve with burrata, basil, olive oil and balsamic glaze!
White chicken chili & cornbread
make cornbread muffins according to box. finely chop onions, poblano peppers, jalapenos, and garlic. saute on medium high heat until soft, then add chili powder and cumin. add chicken breast to the pot, season with salt and pepper, add a full container of chicken broth, and boil until the chicken is cooked through. remove the chicken, shred, then add back to the pot. add two cans of white beans and simmer. serve with sour cream, avocado, and the cornbread muffins!
Coleslaw
finely shred cabbage with a spiralizer. mix together a cup of mayonnaise, a few glugs of apple cider vinegar, a couple spoonfuls of honey, and a generous amount of celery seeds, salt, and pepper. mix together with the cabbage, refrigerate, and use as a side for other dinners!
Barbeque pulled pork
season 4lbs of pork shoulder in a roasting pan with olive oil, salt, pepper, garlic powder, onion powder, paprika, and cumin. roast at 425 uncovered for 1.5 hrs. cover with foil and lower the heat to 350, then continue roasting for 3-4 hrs. shred and add a full container of barbeque sauce. eat on its own with the coleslaw and muffins, or use it to make pulled pork sandwiches!
