Salmon, broccoli, and rice

season broccoli and salmon fillets with lemon, olive oil, and salt on a single sheet pan
place lemon slices over top
roast everything at 425 for 20-25 minutes
eat with rice and furikake

mix leftover salmon, rice, soy sauce, sriracha, kewpie mayo
eat with roasted seaweed and kimchi
Sweet and savory veggie soup

heat a large pot over medium heat and cook bacon until crispy, remove
saute onion and garlic using the leftover bacon grease in the pot
add japanese sweet potato, cook for 5 mins, then add cabbage and daikon radish
add chicken bone broth and water until veggies are covered, plus salt and herbs
simmer until veggies are cooked through
serve with crispy bacon bits on top
Papaya yogurt boat

slice ripe hawaiian papaya in half and scoop out seeds
drizzle a little honey and granola into the hole, then add a few scoops of greek yogurt
top with more honey, granola, and freshly squeezed lime
Kale salad

add cauliflower and turnips to sheet pan and season with salt, pepper, and olive oil
add drained and rinsed chickpeas to a second sheet pan and season
roast both at 425 for 30-35 minutes
make a quick dressing by mixing tahini, greek yogurt, meyer lemon, salt and honey
massage kale with olive oil to soften and top with roasted veggies, chickpeas, and dressing
Sweet and sour cotton candy grapes

rinse and dry grapes (I used cotton candy grapes), put in a bowl
squeeze limes and lemon into the bowl
add sugar to a separate small bowl
swirl grapes in the sour juice, then dip into the bowl of sugar and toss around to coat
put on a lined cutting board or baking sheet
freeze for 4+ hours or overnight
