Green Chef and I worked hand-in-hand to create these 8 delicious and simple meals that are inspired by my favorite dishes. I approached creating these recipes just like how I plan my own meals. I start with the protein - wild caught salmon, organic chicken, grass-fed beef or tofu. Then I pair a carb - usually rice, sometimes potatoes. I always include a veggie or two, and finish with a fresh herb to top it off! These 8 dishes are unique and flavorful, and most importantly - easy to make. Everything is pre-portioned, prepped and delivered straight to your door.

Scrambled eggs with radish leaves
The greens on my radishes were extra fresh looking this week, so I washed and saved them to put in my scrambled eggs. Just sauté them like spinach and add the eggs after they’re wilted. I had this with sourdough toast with butter and jam.
Shrimp scampi linguine
Prep all of the ingredients - peel and devein shrimp, zest and juice two lemons, finely chop a shallot, 4 cloves of garlic, and parsley. Grate parmesan and have butter and chicken broth at hand. Boil pasta until just done, save some pasta water and set the drained pasta aside. In a pan over medium low heat, sauté shallots and garlic in olive oil and butter until fragrant. Add salt, pepper, red pepper flakes, about a cup of chicken broth, and the shrimp. When the shrimp is cooked through, combine everything with the pasta. Then add the lemon juice, lemon zest, pasta water, parmesan, and parsley. So yummy!
Lemon herb chicken with sheet pan veggies
Preheat oven to 425. Whisk together olive oil, lemon juice, dijon, salt, pepper, oregano, and fresh herbs. Pour over chicken breast in a roasting pan. Slice delicata squash and place on a sheet pan with olive oil, salt and pepper. Add broccolini to a separate sheet pan with olive oil, salt and pepper. Bake everything together until the chicken is cooked through.
