cut soft tofu into 1 inch cubes
season peppers, onions, and broccoli with avocado oil, salt and pepper
roast veggies at 425 for 25 minutes
serve roasted veggies and tofu with rice and drizzle with miso dressing

thinly slice japanese cucumber and carrots
serve poke and toppings over rice with sesame seeds and pickled ginger

sheet pan salmon and veggies
season one fillet of salmon with soy sauce, oregano, paprika, salt and pepper
season one fillet of salmon with just salt and butter (for leftovers!)
season broccoli and turnips with olive oil, salt, pepper, soy sauce, and chili crunch
roast everything at 425 for 20-25 minutes
eat with rice

salmon rice bowl
pickle turnip leaves by mixing with salt, setting aside for 1hr, then squeezing water out
mix leftover salmon, rice, soy sauce, sriracha, kewpie mayo
top with pickled turnip leaves and eat with roasted seaweed, sliced cucumber and kimchi
Dinner
japanese curry
cut kabocha or buttercup squash, japanese eggplant, and onion into bite-size pieces
saute onion in large pot until translucent, then add kabocha and eggplant and saute for 3 more minutes
add 5 1/2 cups water to pot and simmer for 15 minutes
remove from heat and mix in one box of japanese curry mix
add to heat again and simmer for another 10 minutes until thickened
serve with rice and pickled shallots

persimmon salad
thinly slice fuyu persimmon
mix dijon mustard, honey, apple cider vinegar, salt, pepper, and olive oil for dressing
chop dandelion greens and mix with dressing
top with persimmon, toasted pine nuts and shaved parmesan
Dinner
pasta with meat sauce
finely chop onion and mince garlic
bring pot of water to a boil
saute onions in large pan, then add ground beef, salt, and garlic
once beef is browned, add in one jar of rao’s tomato basil sauce
boil pasta, drain, and mix in with meat sauce
serve with grated parmesan

preheat oven to 400 degrees
slice potatoes into quarters and peel garlic cloves
coat potatoes and garlic with olive oil, salt, and fresh rosemary
place on baking tray and roast in oven
cut onion and place on second baking tray with sausage
roast in oven with the potatoes for 30 mins
