My Grocery Lists
Sunday
Shrimp with coconut rice & mango salsa
mix olive oil, honey, soy sauce, lime zest, garlic, cilantro, and salt
use half the mixture to marinate the shrimp while preparing rest of ingredients
cook rice with 1:1 ratio of full-fat coconut milk and water in rice cooker
finely chop mango, red onion, jalapeno, cilantro. mix with lime juice for salsa
cook shrimp on medium-high and mix with rest of sauce
serve with more cilantro and fresh lime

Shrimp tacos
reheat leftover shrimp and rice
mix greek yogurt with lime juice, zest, and salt
heat corn tortillas and assemble tacos
top with leftover mango salsa and yogurt lime sauce
Crispy skin salmon
dry out salmon skin-side up uncovered in fridge
prepare rice in rice cooker
thinly slice cucumber, salt, and set aside
heat olive oil and butter on medium high heat, salt and pepper salmon, and cook skin side down. press down to flatten skin
squeeze water out of cucumbers and mix with mizkan sushi seasoning and sesame seeds
flip salmon, cook until done
remove from pan and add broccoli to same pan
serve with rice and pickled ginger

Yogurt chicken marinade
mix greek yogurt with oregano, garlic, lime or lemon, salt, pepper, and olive oil
add chicken thighs and thoroughly mix
refrigerate 4+ hrs
Yogurt chicken and greek salad
take chicken out from fridge to come to room temp
dice cucumber, tomato, red onion, olives, cheese (feta is best)
combine with finely chopped mint and oregano, olive oil, salt and pepper
grill chicken thighs and serve with the salad

Wednesday
Chia pudding
chia pudding topped with strawberry jam, fresh fruit, and granola
Leftovers Chicken Tzatziki bowl
reheat rice and chicken
grate cucumber, salt, and set aside
add chopped lettuce and rice to a bowl, top with leftover chicken and greek salad
squeeze water out of cucumbers and finely chop mint
mix together with greek yogurt, lime/lemon and salt to make quick tzatziki
top the bowl with the tzatziki

Thursday
Egg avocado toast
scramble eggs, mash avocado with salt
toast sourdough and top with cream cheese, arugula, avocado, and eggs
top with sriracha and everything seasoning
Steak & potatoes
cut potatoes into wedges and soak in warm salt water while oven preheats to 400
season with oregano, garlic powder, onion powder, salt, and pepper
roast for 1 hr, flip halfway through
heat up the grill right after flipping the potatoes
salt and pepper the steaks and grill until desired temp
serve with lemon and olive oil arugula salad, potatoes, and butter on top

Friday
Steak Salad
thinly slice leftover steak and red onion, dice and salt tomatoes and avocado
chop lettuce and kale, massage kale with a bit of olive oil, add to bowl
mix balsamic vinegar, dijon, salt, pepper, and olive oil for a quick dressing
add toppings to salad with the dressing
Chicken parm
grate parmesan, set aside half
mix parmesan and panko in one bowl, scramble eggs in a second bowl, and season flour in a third bowl
place chicken cutlets in flour, then egg, then panko mixture one by one
season cauliflower with salt, pepper, parmesan, and olive oil
bake both at 425 for 30 mins
make angel hair pasta, mix with a bit of marinara to help unstick
take cauliflower and chicken out of the oven
top chicken with marinara, sliced mozzarella, and parmesan. broil until bubbling
mix pasta with remaining marinara sauce
serve together with extra parmesan

add prepped green juice ingredients to blender with water
a great way to use up greens leftovers!
