sheet pan salmon and veggies
season salmon and broccoli with butter, lemon, garlic and salt
place lemon slices over salmon
roast everything at 425 for 20-25 minutes
eat with rice

cottage cheese with strawberry jam
protein smoothie with banana, chocolate protein powder, peanut butter, and oat milk
Lunch
salmon rice bowl
mix leftover salmon, rice, soy sauce, sriracha, and kewpie mayo
eat with avocado, roasted seaweed, and kimchi
Dinner
spring rolls
boil shrimp (save the shrimp skins!) and glass noodles
finely slice carrot, cucumber, and tofu
assemble veggies, shrimp, noodles, and mint in rice paper wraps
mix peanut butter, rice vinegar, soy sauce, and honey to dip

protein smoothie

leftovers noodle soup
place leftover glass noodles, shrimp, spinach, tofu and mint into a bowl
boil shrimp skins with instant bone broth, salt to taste
strain and pour into bowl
Snack
sugar snap peas
blanch sugar snap peas just until bright green, under a minute!
mix kewpie mayo with curry powder for a quick dip
Dinner
Dinner out with friends!

scrambled eggs with spinach and onion
toast with avocado, lemon, salt, chili flakes

to-go salad

mushroom pesto pizza
make simple mills almond flour pizza dough according to box
saute onions and mushrooms with butter and umami salt
spread pesto over pizza crust and top with sliced mozzarella and mushroom onion mix
serve with fresh parsley

Thursday
Breakfast
cottage cheese and jam
protein smoothie
Snack
chili crunch cucumbers
smash persian cucumbers with the back of a spoon, slice on a diagonal
mix with a spoonful of momofuku chili crunch and salt
Lunch
mushroom rice bowl
saute leftover mushroom onion mix with butter until warmed through
add leftover rice, spinach, and soy sauce and mix
serve with sunny side up egg and sriracha
Dinner
chicken, sweet potato, and greens
preheat oven to 425 and set a pot of water to boil
boil sweet potatoes for 50 mins (I need to buy a steamer!)
season chicken breast with salt, pepper, garlic powder and paprika
sear chicken skin side down on stovetop, then transfer to sheet pan to cook in the oven for 20-25 mins
saute rainbow chard in same pan with garlic, salt, and lemon juice
serve with butter

ginger pork and bok choy
saute ginger, garlic, and bok choy until softened, remove from pan
saute onion, ground pork, ginger, garlic, and salt
mix miso, soy sauce, mirin and rice vinegar and pour into pan
stir back in the bok choy
serve over rice with pickled ginger
