Strawberry rhubarb pie
I used the same pie crust recipe from thanksgiving, and this recipe for the filling but with only 1 cup of sugar.
Burger patties
generously season ground beef with garlic powder, onion powder, and pepper. mix in breadcrumbs, a splash of milk, and worcestershire sauce. form into patties and stack with wax paper in between. refrigerate until ready to grill. salt both sides right before grilling.
Pasta salad
cook tri-color pasta and set aside to cool, mixing with a bit of olive oil so the pasta doesn’t stick. chop radishes, cucumber, cherry tomatoes, red onion, and olives into bite size pieces. finely chop dill and basil. make a quick dressing with garlic, dijon, salt, pepper, vinegar and olive oil. mix everything together and refrigerate until ready to serve.
Grilled veggies
slice summer squash into halves lengthwise, sweet onion into discs, and cauliflower into steaks. mix salt and pepper in a small bowl. slice a stick butter into individual patties and separate with cut wax paper. arrange everything on a tray to be grilled when ready. season right before grilling.
Watermelon salad
cut watermelon into cubes. sprinkle with crumbled feta and finely chopped basil and mint. mix together with fresh lime juice.
Build your own burger station
separate lettuce leaves, wash and dry thoroughly. arrange on a tray with sliced tomatoes and pre-sliced cheddar. throw some sliced pickles in a small bowl and whole pickles in a glass jar. make sure to have condiments as well - ketchup, yellow mustard, mayo, and bbq sauce! when the onions are grilled, add them to the burger station.
Sheet pan salmon and cauliflower
season salmon with salt, butter, and lemon. add cauliflower to sheet pan and season with salt, pepper, olive oil and curry powder. place lemon slices over salmon and roast everything at 425 for 20 minutes. eat with rice.
Papaya yogurt boat
slice ripe papaya in half and scoop out seeds. add a few scoops of greek yogurt into the hole. top with sliced nectarines, honey, granola, and freshly squeezed lime.
Salmon rice bowl
mix leftover salmon, rice, soy sauce, sriracha, and kewpie mayo. eat with roasted seaweed and kimchi!
Breakfast bun
toast leftover burger buns with a slice of cheese to melt. add a fried egg, kewpie mayo, and arugula.
Sugar snap peas
blanch trimmed sugar snap peas for less than a minute then cool in an ice bath. mix kewpie mayo with curry powder for a yummy sauce!
