It’s my birthday today!!! I’m 30 years old and feeling better than ever.

Welcome back to Emily’s Life Plan for the Week, a weekly newsletter where I share my personal notes and recap every little detail from my previous week’s videos (follow me on tiktok, youtube, instagram, and twitter @emilymariko)!

I’m slowly getting back into my routine after the holidays so today’s newsletter is short and sweet. Anything underlined is a link, and if you’re looking for something in particular, chances are it will be all the way at the bottom in the FAQ section (including a link to my new rice cooker)!

Zareen’s takeout

Our fav takeout, they have a few locations in the bay area! I always get the paneer tikka masala with basmati rice and garlic naan!

Tuna Salad Salad

Top romaine lettuce with cherry tomatoes, purple cabbage, shredded carrots, cucumber, and broccoli. Add a scoop or two of tuna salad on top!

Chicken stir fry

Create a sauce with soy sauce, rice vinegar, honey, and sesame oil
Chop veggies and grate garlic and ginger, set aside
Add chicken strips to hot pan until golden, remove from pan. Add veggies (I used bell peppers, cabbage, and broccoli) to pan and add garlic and ginger
Add sauce to pan, mix, then add chicken and cook until heated through and sauce has thickened
Serve with rice and sesame seeds!

Green Juice

I prep my green juice by chopping celery, cucumber, parsley, lemon, and ginger ahead of time and putting them in tupperware in the fridge. Then I just take a container, pop it all into the vitamix, add spinach and water, and blend! I pour it over ice so it’s cold and sometimes add more lemon :)

Smoked salmon bagels

Toast everything bagels and top with cream cheese, smoked salmon, thinly sliced red onion, capers, and lemon juice!

Cheesey spaghetti squash

I followed this recipe but used fresh spinach, different cheeses, and added the garlic directly to the cheese mixture! I used gruyere, fontina, and mozzarella cheese.
