Potato leek soup
peel ~10 yellow potatoes and chop into small pieces. clean and slice 2-3 leeks. finely chop dill and set aside. saute leeks in butter until softened, then add potatoes. add two containers of chicken broth, two bay leaves, salt, pepper, and thyme. simmer for 30-40 mins until potatoes are soft. turn off the heat, remove the bay leaves, add the dill, and blend just until smooth. serve with more dill.

Tomato basil gnocchi
wash 2-3 cartons of cherry tomatoes. finely slice basil and garlic. toast the garlic in olive oil as it heats up on the pan. add the cherry tomatoes, salt, and a parmesan rind. stir every once in a while until transformed into a sauce, about 30 mins. turn off the heat, add a splash of cream, basil, salt and pepper to taste. boil and drain gnocchi, reserving some pasta water, then mix together with the sauce. serve with fresh parmesan.

Tuesday
Grilled chicken & veggies
marinate chicken cutlets in olive oil, lemon juice, salt, pepper, garlic powder, and paprika. prep veggies by slicing them and coating in olive oil, salt, and pepper. grill the chicken cutlets for 3 mins per side until cooked through, then the veggies for 3-4 mins per side.

Cobb salad
bake bacon on a sheet pan at 400 for 20 mins until crispy. mix a quick dressing with plain yogurt, balsamic glaze, dijon mustard, salt, pepper and olive oil. chop hardboiled eggs, grilled chicken, tomatoes, lettuce, avocado and bacon. assemble in a bowl then drizzle the dressing over top. top with shredded cheese!

Teriyaki beef & green beans
brown thinly sliced beef on a hot pan with avocado oil. add salt and pepper, and when almost cooked through add green beans and teriyaki sauce. cook for 3-4 mins until green beans are cooked through but still crunchy. serve with rice and sesame seeds.

Broccoli salad
cut broccoli into small pieces. finely chop red onion, walnuts, and bacon. mix together with dried cranberries, two scoops of yogurt, two scoops of mayo, salt and pepper.
