Salad dressing prep!
Add a clove of minced garlic, olive oil, apple cider vinegar, red wine vinegar, honey, salt and pepper to a small jar. Store in the fridge to use throughout the week, just give it a good shake before using! I used this on kale, lettuce, and whatever fresh veggies I had on hand.
Chicken fajitas
Make a big batch of seasoning by mixing garlic powder, onion powder, cumin, chili powder, oregano, paprika, salt and pepper. Use half of it to season chicken breast, and the other to season bell peppers and onions on the stove. Bake chicken breast at 425 for 30 mins. Saute sliced bell peppers and onions with avocado oil on medium high heat, using the rest of the seasoning mix. I had to do it in batches because I had so many veggies to cook! Slice the chicken and serve with the veggies, rice, guac, sour cream, and pico de gallo.
