This past week was a little different than usual - Matt and I got engaged!!! Thank you all so so much for the love and congratulations. I’ve never felt so happy and full, and I’ve basically been crying for 24 hours straight. Matt and I have been together for over 6 years, and he’s actually the one who nudged me to start creating content back in 2015 when we met. At that time I had posted a few YouTube videos years before in college, but had stopped since. He saw how much I loved documenting my life and watching other creators and has been my #1 fan ever since.
It’s insane how within the last month, everything has felt like it’s fallen into place. Everything makes sense. I’m so full of love I could explode. Thank you all so much for finding me and joining along in the journey. How fun will this next year be!!! WE’RE GETTING MARRIED!!!
One last note - I hear you about including workouts, cleaning, and other routines into these weekly recaps. I’ll slowly start to incorporate more and more starting next week!

poke bowl
thinly slice japanese cucumber, carrots, and avocado
mix rice with mizkan sushi seasoning
serve poke and toppings over rice with kewpie mayo, takuan, and pickled ginger

white nectarine
toast with cream cheese, scrambled eggs, sriracha, and everything but the bagel seasoning
Lunch
beet salad
beets, arugula, and chopped almonds salad with herb goat cheese, lemon, and olive oil
Dinner
sheet pan salmon and cauliflower
season salmon with salt and butter
season cauliflower with olive oil, salt and pepper
roast both at 425 for 20-25 minutes
eat with rice and miso gravy

Breakfast
toast with cream cheese, early girl tomatoes, and everything but the bagel seasoning
Lunch
salmon rice bowls
mix leftover salmon, rice, soy sauce, sriracha, kewpie mayo
eat with roasted seaweed, takuan, and kimchi
Dinner
pesto soba and tofu salad
make sesame dressing from leftover miso gravy by diluting with water and adding honey and sesame seeds
boil soba noodles, thoroughly rinse, combine with pesto, and top with shiso leaf
cut soft tofu into cubes and eat with arugula and sesame dressing

overnight oats with peanut butter and jelly
Lunch
leftover pesto soba
sungold tomato, cucumber, and red onion salad with olive oil and balsamic glaze
Dinner
pork lettuce wraps (I used pork instead of chicken)
serve with rice

Thursday
Breakfast
toast with cream cheese and strawberry syrup
Lunch
scrambled eggs with mushrooms
sautee clamshell mushrooms in olive oil until soft, remove from pan
make scrambled eggs
right before eggs are done, toss back in the mushrooms along with creme fraiche and chives
eat with toast
Dinner
grilled veggies and flank steak
marinate flank steak in lemon, olive oil, and garlic overnight
prep veggies to grill (cut or put on skewers)
make mushroom cream sauce
grill flank steak for 5 mins per side, grill veggies until done
serve steak with mushroom sauce on top

Friday
Matt and I had breakfast at Cafe Borrone, then picked up sandwiches and coffee at Mademoiselle Colette. We drove through the mountains to the beach and he proposed on a cliff overlooking the ocean. We spent the rest of the day at the beach and this weekend has been spent celebrating with friends and family.
