“veggie rebel” pastry from craftsman & wolves bakery
Lunch
poke bowl
thinly slice cucumber and carrot using a peeler
top rice with poke, cucumber, carrot, and pickled ginger
top with sesame seeds
Dinner
sheet pan salmon and veggies
season salmon with olive oil, salt, pepper, dijon mustard, and lemon juice
place lemon slices over salmon
season one fillet with just butter and salt (for leftovers!)
on a separate sheet pan, season broccolini with salt, pepper, lemon juice, olive oil, and parmesan
roast everything at 425 for 20-25 minutes
eat with rice

mix leftover salmon, rice, soy sauce, sriracha, kewpie mayo
eat with roasted seaweed and kimchi

we had so much leftover salmon this time that we had salmon bowls again for din lol

massage kale with olive oil and salt, set aside
thinly slice apple and parmesan, toast chopped almonds
make a quick dressing with yogurt, balsamic glaze, dijon mustard, salt, pepper, and olive oil
mix everything together with the dressing

serve with ginger garlic bok choy and rice

we went to our fav local breakfast place for brunch!
Orange Juice
I used whatever we had, including cara cara, blood, sunset, and navel oranges! and grapefruit!
Dinner
“clear out the fridge” type of dinner
roast japanese sweet potatoes at 425 for 1 hr, wrapped in foil
while potatoes are in the oven, boil baby cauliflower in salted water with something to weigh them down (i used a small pot lid) for 5 mins
with 25 mins remaining on the potatoes, brush cauliflower with olive oil and salt and place in the oven
broil at the end for 3-5 mins
mix tahini, miso, lemon juice, soy sauce, and rice vinegar for a dip, serve with leftovers
