Sunday
Breakfast
“the rebel within” and morning bun pastries from craftsman & wolves bakery
Lunch
poke salad
thinly slice cucumber
mix yogurt, lemon juice, salt, and honey for a quick dressing
add cucumbers to lettuce, mix with dressing, and top with poke, sesame seeds, green onions, and avocado
Dinner
scallops and veggies
roast okinawan sweet potatoes at 400 for 1 hr
mince garlic, halve lemon, and chop parsley. season scallops with salt and pepper
saute kale raab with salt and pepper on medium heat, remove from pan
saute scallops in same pan for 1 min per side, remove from pan
melt butter and garlic in pan, turn heat to low, add lemon and salt
add kale raab and scallops back to pan and mix
serve with the roasted sweet potato

Breakfast
greek yogurt with strawberries, mango, and honey
side of monkey bread
Lunch
avocado toast with egg
mash avocado with lemon and salt
add avocado to toasted sourdough and top with an over medium egg
drizzle with olive oil and everything seasoning
serve with radish
Dinner
sheet pan salmon and veggies
season salmon and broccoli with olive oil, salt, pepper, and lemon juice
place lemon slices over salmon
roast everything at 425 for 20-25 minutes
eat with rice

Tuesday
Breakfast
Snack
artichokes with lemon garlic aioli
cut top off artichoke and trim leaves and stem
fill pot with 2-3in of water, add lemon and peppercorn. boil artichokes for 30 mins
while cooling mix mayo, garlic, lemon, and salt
once cooled cut artichokes in half and remove the choke
tear off a leaf and dip in the aioli, scraping off the meat with your teeth. eat the hearts or save for later for artichoke dip :)
Lunch
salmon rice bowl
mix leftover salmon, rice, soy sauce, sriracha, kewpie mayo
eat with avocado, roasted seaweed, and takuan pickles
Dinner
stuffed pork chops
I used this recipe but with panko
for salad dressing I mixed shallots, balsamic glaze, yogurt, dijon, salt and pepper
serve stuffed pork chops with kale apple salad

pomelo (melogold variety) with sugar, protein smoothie after the gym
Lunch
leftovers salad
chop remaining kale, lettuce, and sweet potato
top with almonds
mix with leftover dressing
Dinner
spinach artichoke dip
I roughly followed this youtube video but added mozzarella cheese and used fresh garlic vs. powder
serve with tortilla chips
(I mainly had this for dinner but rounded it out with some fridge scraps!)

breakfast wrap and potatoes from cafe borrone
Lunch
leftover dip and veggies
warm leftover dip in microwave
eat with raw radish, cucumber slices, and carrots
Dinner
easy sheet pan chicken
season chicken legs and potatoes with olive oil salt, pepper, garlic powder and paprika
roast at 400 for 45 mins
saute broccolini over medium heat with salt and pepper
serve with chicken and potatoes
