Chili
Rinse two cans of “bean trio” beans. Finely chop onion, bell pepper, poblano pepper, garlic, and green onions. Shred cheddar and set aside. Make a seasoning mix with paprika, chili powder, cumin, oregano, salt and pepper. Saute onions in a large pot, then add the peppers. Add two pounds of ground beef, the seasoning mix, and cook until browned. Drain the fat (I just use a paper towel to soak it up). Add tomato paste, garlic, and a can or two of tomatoes, I used a mixture of whole peeled and pureed. Add beef broth and salt to taste. Simmer for as long as you can. Top with sour cream, green onions, and cheddar.
Chicken lettuce cups
Make a sauce by mixing miso, soy sauce, rice vinegar, molasses, peanut butter, sriracha, garlic and ginger. Finely chop an onion, green onions, and two cans of water chestnuts. Saute onions in a large pan, then add two packages of ground chicken and cook through. Drain the fat. Pour in the sauce, mix, then add the water chestnuts and green onions. Serve on butter lettuce leaves with rice.
Fish Piccata
Half and quarter small potatoes, coat with olive oil, salt, pepper, and garlic powder, and roast at 425 for 40 mins. Pat dry a thin white fish (I used sole), and sprinkle with salt, pepper, and flour. Fry the fish in a few glugs of avocado oil on medium-high heat, about 2 mins per side. Transfer to a plate. Add white wine to the pan and let it reduce. While it simmers, add seasoned green beans to a baking tray and pop in the oven for 15 mins. To the white wine add butter, lemon juice, and capers. Place the fish back into the pan to warm through with the sauce. Serve with the potatoes and green beans.
Leftovers salad
Chop lettuce and top with leftover green beans, potatoes, fish, olives, capers, and a boiled egg. Mix together parsley, mustard, lemon juice, maple syrup, salt, pepper, and olive oil for a dressing.
